Since the Meiji era, Japan's rapid modernization was supported by Hokkaido's coal, steel, ports, and the railway network that connected them. The food culture that became the source of nutrition for the workers, who were the protagonists of these stories called "Tantetsuko," involving coal ("Tan"), steel and railways ("Tetsu"), and ports ("Ko"), has created unique dishes in each region and continues to breathe life into the lives of people today.
